APPLE CIDER CUSTARD OATMEAL FRENCH TOAST
Oatmeal meets French toast! This bread-free french toast is made from oats & The Toasted Oat Cherry Streusel Soft Granola, then dipped in an Apple Cider Custard & seared until golden brown.

INGREDIENTS
Oatmeal Squares
- 3/4 cup The Toasted Oat Cherry Streusel Soft Granola
- 1 cup gluten-free oats
- 2 cups water
- 1/4 tsp salt
Apple Cider Custard
- 3/4 cup apple cider
- 5 eggs
- 3/4 cup brown sugar (or coconut sugar)
- 1/4 cup granulated sugar
- 1/4 cup gluten-free flour
- 1/4 tsp. salt
INSTRUCTIONS
In a small saucepan, bring the water to a boil, then add salt, oats & The Toasted Oat Cherry Streusel Soft Granola. Cook (uncovered) until the water has completely evaporated & oats are tender.
Grease an 8-inch by- 8-inch baking dish. Pour the cooked oat mixture into the dish & press down firmly, forming an even layer.
Place dish in the refrigerator uncovered for at least two hours or overnight, until set & firm to the touch.
Whisk the Apple Cider Custard ingredients until well combined.
Once oatmeal mixture is set & you are ready to cook, cut the oatmeal into nine equal squares & preheat the oven to 375 degrees Fahrenheit. Dip oatmeal squares into Apple Cider Custard, allowing them to soak about 30 seconds on each side.
Melt about a tablespoon of butter or coconut oil on a skillet on medium-low heat. Place covered oatmeal squares onto pan & cook until golden brown, then flip. (Only a few minutes each side.) Remove from pan & place on foil-lined baking sheet. Repeat for all pieces.
Place baking sheet in oven for 5-10 minutes. Serve with confectioners sugar or pure maple syrup.
