CHOCOLATE PEANUT BUTTER STUFFED DATES

- 24 fresh Medjool dates
- 1/2 cup The Toasted Oat Apricot Shortbread Soft Granola
- 3/4 cup peanut butter
- 1/2 cup chocolate baking chips (dairy-free options)
- 1 tsp. salt
Use a butter knife to make lengthwise slits into the dates. Remove the pits.
Add peanut butter & Apricot Shortbread Soft Granola to a medium bowl. Mix until well combined.
Overstuff dates with the peanut butter mixture using a spoon.
Melt chocolate in microwave 30 seconds at a time or on the stovetop over low heat.
Spoon chocolate into a piping bag (or plastic bag) & drizzle all over dates. Top with cracked salt & store in the refrigerator.
