GLUTEN-FREE GOAT CHEESE CHEESECAKE RECIPE
Cheesecakes are an indulgent, rich dessert & are great for sharing! This recipe is our fluffy take on a classic dessert, made with goat cheese & a simple soft granola crust.
Goat Cheese Cheesecake

- 4 eggs
- 1 cup sugar
- 2 tsp. vanilla extract
- 4 tbsp. unsalted butter, melted
- 16 oz. cream cheese
- 12 oz. log goat cheese
- 12 oz. sour cream [or crème fraîche]
- 10 oz. The Toasted Oat Macadamia Chunk soft granola
Preheat oven to 350 degrees.
Melt 4 tbsp. butter. Add 10 oz. bag of TTO granola [we chose Macadamia Chunk] & stir well, using a fork to combine.
Press mixture into a butter-greased springform pan. If preferred, press crust up sides of pan.
Beat cream cheese & goat cheese until light & fluffy. Add sour cream & beat to combine. Add in eggs 1 at a time, beating after each addition.
Beat in sugar & vanilla extract until just combined.
Pour filling into prepared crust & place springform pan on baking sheet with edges. [Butter will drip.] Bake for 50-60 minutes, rotating sheet half way through baking. If edges begin to brown, tent pan with foil.
Remove from oven & let cool completely. Refrigerate overnight. Sprinkle on your favorite TTO granola & top with your favorite berries.
