GLUTEN-FREE CHERRY ALMOND CLAFOUTIS RECIPE

Our take on a classic French dish, this Cherry Almond Clafoutis starts of with a layer of black cherries arranged in a buttered dish. Traditionally made with a thick batter, the clafoutis is dusted with powdered sugar & served warm [sometimes with cream].
The Toasted Oat Cherry Streusel soft granola is the secret ingredient to a moist batter with bursts of flavor.
Cherry Almond Clafoutis

INGREDIENTS
- 1 tbsp. unsalted butter [option to sub coconut oil]
- 2 tbsp. unsalted butter, melted [option to sub coconut oil]
- 1/2 lbs fresh cherries, pitted
- 1/2 cup gluten-free flour
- 1/4 cup sugar
- 1 cup The Toasted Oat Cherry Streusel soft granola
- Pinch of salt
- 2 eggs
- 1/3 cup almond milk
- 1/4 cup sliced almonds
- Powdered sugar, for dusting
INSTRUCTIONS
Preheat oven to 375 degrees Fahrenheit.
Grease oval baking dish with 1 tbsp. butter [or coconut oil].
Prepare cherries by rinsing & removing stems. Remove pits & arrange evenly on the bottom of the baking dish.
In a medium bowl, combine flour, sugar, The Toasted Oat Cherry Streusel soft granola & salt.
Whisk in eggs. Add 2 tbsp. melted butter & milk. Whisk until smooth.
Pour batter over cherries & top with sliced almonds.
Bake for 40-45 minutes, or until top is golden brown. Dust with powder sugar & serve warm.
