- 2 1/2 lbs sweet potatoes
- 1 cup The Toasted Oat Cherry Streusel soft granola
- 3/4 cup dark brown sugar
- 1/4 cup unsalted butter, softened [option to sub for coconut oil]
- 1 1/2 tsp. salt
- 1/2 tsp. pure vanilla extract
- 2 cups gluten-free marshmallows
Preheat oven to 375 degrees Fahrenheit.
Peel sweet potatoes & cut into 1-inch cubes.
Place sweet potatoes in a dutch oven & cover with cold water. Bring to a boil. Reduce heat & simmer for 15 minutes, or until very tender. Drain & let cool slightly.
Add sweet potatoes, brown sugar, butter, salt & vanilla extract to a large bowl. Mix well with potato masher & stir in 1/2 cup The Toasted Oat Cherry Streusel soft granola.
Place potato mixture in greased baking dish or ramekins, sprinkle with remaining soft granola & top with marshmallows.
Bake for 25 minutes & serve immediately.
