DARK CHOCOLATE COVERED CHERRY ALMOND OAT BITES

- 10 oz. bag The Toasted Oat Cherry Streusel Soft Granola
- 2/3 cup dried cherries
- 3 tbsp. coconut oil
- 1 bar baking chocolate, dark
Place coconut oil in small bowl and microwave until melted, or place in a small pot over medium heat until melted.
Pour The Toasted Oat Cherry Streusel Soft Granola into a bowl & drizzle on melted coconut oil. Mix together well with hands.
Roll bite-sized amount of granola into a ball. Push 2-3 dried cherries into the center and continue to mold the ball. (As the coconut oil cools, the ball will become more firm.)
Place bites on a cooling rack. Make sure you use the same amount of the mixture to keep them an equal size.
Melt the dark chocolate in a microwave 30 seconds at a time, or over a small pot on the stove, set at medium heat. Add 1/2 tsp of coconut oil before melting chocolate, if desired.
Pour dark chocolate on top of each ball until they are mostly covered. Let cool on rack until chocolate sets & can be transferred to a cooking sheet. Transfer cooking sheet to the refrigerator for about 10 minutes. Serve chilled & store in an airtight container.
