PUMPKIN DATE SOFT GRANOLA BARS

- 10 oz. bag The Toasted Oat Macadamia Chunk Soft Granola
- 1 1/2 tsp. pumpkin pie spice
- 1/2 tsp. cinnamon
- 1/4 tsp. salt
- 3/4 cup dates (about 10 dates)
- 1/4 cup pumpkin puree
- 1/4 cup peanut butter
- 1 tbsp. coconut oil
- 2 tbsp. maple syrup
- 5 tbsp. dark chocolate chips
- 3 tbsp. dried cranberries
- 3 tbsp. pumpkin seeds
Preheat oven to 350 degrees Fahrenheit. Line an 8-inch by 8-inch baking dish with foil. Set aside.
Pulse pitted dates in a food processor until a ball beings to form. Place in large bowl & add The Toasted Oat Macadamia Chunk Soft Granola, pumpkin pie spice, cinnamon & salt. Mix with a spoon & set aside.
In a small sauce pan, combine pumpkin puree, peanut butter, maple syrup & coconut oil. Whisk until creamy & slightly warm. Pour over granola mixture and use your hands to combine, breaking up the dates.
Add chocolate chips, pumpkin seeds & cranberries (reserve 1 tbsp. of each for topping) & stir until evenly incorporated.
Brush lined baking dish with melted coconut oil, or spray with nonstick cooking spray. Press down the mixture into dish. Add more chocolate chips, pumpkin seeds & dried cranberries on top.
Bake for 25 mins until sides begin to turn golden brown. Remove the pan from oven & let the pumpkin granola bars cool completely before cutting into slices.
