GLUTEN-FREE CHERRY GRANOLA CRUSTED PORK CHOP RECIPE
Cherry Granola Crusted Pork Chops

INGREDIENTS
- 2 pork chops
- 1/2 cup gluten-free breadcrumbs
- 1/4 cup The Toasted Oat Cherry Streusel soft granola
- 2 tbsp. cup grated Parmesan cheese
- 1/4 tsp. dried thyme
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 2 eggs
- Splash of milk
- 1/4 cup gluten-free flour
- Salt & pepper
- Cooking spray, butter or coconut oil
INSTRUCTIONS
Preheat oven to 425 degrees Fahrenheit.
In a shallow dish, mix together breadcrumbs, The Toasted Oat Cherry Streusel soft granola, Parmesan cheese, thyme, salt & pepper until evenly incorporated. Set aside.
In a small bowl, whisk together eggs & milk. Set aside.
In another shallow dish, mix together flour, salt & pepper with a fork.
Trim pork chops of any excess fat. Dredge pork chop in gluten-free flour, shaking off excess, then dip the pork chop into the liquid egg mixture. Let excess egg drip off, then place into breadcrumb mixture & press into crumbs until all sides are evenly coated.
Place on prepared baking sheet. Spray tops of pork chops with nonstick spray or brush with melted butter [or oil]. Bake for about 20 minutes, or until meat temperature reaches 145 degrees Fahrenheit.
