GLUTEN-FREE BLUEBERRY BANANA PROTEIN MINI MUFFINS RECIPE
Low in prep time, high in protein. Baked with The Toasted Oat Blueberry Cobbler soft granola, these blueberry banana protein muffins are best enjoyed post-workout. Enjoy them mini for just the right amount of pick-me-up.
Blueberry Banana Protein Mini Muffins
INGREDIENTS
- 2/3 cup ripe bananas, mashed
- 2/3 cup The Toasted Oat Blueberry Cobbler soft granola
- 1 scoop vanilla protein powder [your choice, we chose a whey powder]
- 1/2 tsp. baking powder
- 1/2 tsp. cinnamon
- 2 tbsp. unsweetened vanilla almond milk
- 1/2 cup blueberries
INSTRUCTIONS
Preheat oven to 350 degrees Fahrenheit.
Grease mini muffin pan with non-stick cooking spray, butter or oil.
Mash bananas in a medium bowl & set aside.
In a separate medium bowl, combine The Toasted Oat Blueberry Cobbler soft granola, protein powder, baking powder & cinnamon. Stir until incorporated.
Stir mashed banana & milk to dry granola mixture until smooth. Fold in blueberries.
Spoon muffin mix onto muffin pan & bake for 18-20 minutes, or until a toothpick comes out clean.
Cool muffins on cooling rack. Store in an airtight container & enjoy as an on-the-go snack or breakfast.
